What Is Chaoshan Gongfu Tea? A Beginner's Guide

Short answer: Gongfu tea is Chaoshan's daily tea ritual: oolong (usually local Fenghuang Dancong) brewed strong in a small pot, poured into three tiny cups, and refilled round after round through any conversation, business deal or family visit.

The ritual

Chaoshan homes keep a tea set within arm's reach. Guests are seated, water boils, and the host brews — warming the cups, rinsing the leaves, pouring in a circular motion so every cup tastes the same. Three cups on the tray, always: the character 品 (to taste) is written with three mouths.

As a guest

  • Accept the cup with both hands or a two-finger tap of thanks
  • Small sips; the cup will be refilled endlessly
  • You do not need to finish every round — a full cup left means "thank you, enough"

Fenghuang Dancong

The region's prized oolong grows on Fenghuang Mountain and comes in natural aroma types — honey orchid (milanxiang) is the classic starting point.

Where to experience it

Any Chaozhou old-town tea house. Better: let us seat you with a tea master or a village family — gongfu tea is hospitality, not performance.
